There are strict guidelines to servings and grams of fat for all foods consumed daily. The diet allows two servings of dairy per day that includes non-fat or skim milk, non-fat cottage cheese, fat free cheese, non-fat sour cream, non-fat yogurt, non-fat ice cream, butter buds, and cooking spray. No margarine, butter, shortening, lard, coconut oil, palm oil, hydrogenated oil or imitation dairy products are allowed. Eggs are allowed up to 3 per week, one per serving. Up to 4 servings per day of pasta, grains, cereals and rice are allowed. Pastries are not allowed except for angel food cake, which does not have any saturated fat. Processed foods are allowed only if they contain less than one gram of fat. Condiments are allowed, except for mayonnaise, and in prescribed amounts. Three cups of caffeine per day only are allowed. Alcohol is allowed in one serving per day. Nuts and seeds are encouraged, as well as fruits and vegetables. For protein sources, chicken, turkey, all types of white fish, all types of shellfish, and limited fatty fish, such as salmon, is permitted. Red meat is not allowed in the first year of the diet, however, in the second year the consumer is allowed limited amounts of low and medium fat meat. Specific oils are allowed in limited amounts. The consumer is encouraged to take nutritional supplements.
